Down Home Country Meal, 2. Final Papers, 0.
I am completely inundated with writing 10-15 page final papers this week for school! It’s nearly impossible to avoid a highly-elevated level of stress, but every few hours I make sure to take a break from writing, venture outside, and appreciate that it is now May and the weather is undeniably turning fairer by the day. The promise of the fast-approaching summer sustains me, and because I am oft inclined to associate warm, sunny days with the Southern cooking that I enjoyed while spending some time in Louisiana, I felt compelled to cook a nice down home country meal to be shared with my boyfriend, who like me is also studying like a crazy person this week for his law school final exams.
When all is said and done, the stress imposed by this week is nothing that a heaping plate of Oven-Fried Cornflake Chicken, Blue Cheese Scallion Drop-Biscuits from an awesomely fool-proof recipe on SmittenKitchen.com, and some simple Garlicky Collard Greens can’t alleviate!
